Bordeaux spinach has smallish arrow-shaped leaves, of a bronzy olive-green color. Stems are bright burgandy red, and there are also reddish veins. The leaves are thin and smooth-textured. They are not the best for cooking, but do make an attractive addition to a fresh salad.[1]
